Double White Chocolate Macadamia COOKIE Pops!

What you’ll need: 

Dry Ingredients for Cake mix

  • 2 cookies MPB White Chocolate Macadamia Cookies

  • 4 Tbsp Kodiak Cakes Flapjack & Waffle Mix

  • 2 Tbsp Coconut Mix

  • 1 Tbsp Vanilla Protein Powder of Choice

  • 1 Tbsp of Sugar Substitute or Sugar of choice (sweeten as desired)

  • 1/2 tsp baking powder

  • 1 Tbsp White Chocolate Chips

  • 1 Tsp Vanilla sugar-free jello mix

Wet Ingredients for Cake mix

  • 1 egg ( can substitute for only egg whites)

  • 1 Tbsp heavy cream ( can substitute for more almond milk)

  • 4 Tbsp Almond Milk

  • 1/2 Tsp Vanilla Extract

  • 1/2 Tbsp of cooking butter

Wet Ingredients for Cake mix

  • 1 egg ( can substitute for only egg whites)

  • 1 Tbsp heavy cream ( can substitute for more almond milk)

  • 4 Tbsp Almond Milk

  • 1/2 Tsp Vanilla Extract

  • 1/2 Tbsp of cooking butter

Cream Cheese Frosting Ingredients

  • 3 Tbsp of low-fat cream cheese (allow to soften)

  • 1 Tbsp of sugar substitute or sweeter of choice

  • 1 Tsp of honey

  • 1/2 tsp Of vanilla extract

  • 1/2 Tbsp of Vanilla Protein powder of choice

Dipping

  • 6 Tbsp of White Chocolate Chips
  • 1 MPB White Chocolate Macadamia Cookie crumbled

Other tools

  • Cake pop sticks
  • Nonstick Parchment Paper
  • 2 Ceramic Mug Cake bowls
  • Ceramic bowls for melting chocolate and dipping

How to prepare: 

Combine all the dry ingredients for the cake mix (flour, baking powder, protein powder, sugar, jello mix.) Then separate half of the white chocolate chips and chop them evenly and spread throughout the dry mixture. (If you can get your hands on the mini white chocolate chips you get way more per serving and even distribution! 😊)

Next, beat the egg with a fork in a mixing bowl and add in all the wet ingredients (milk, butter, vanilla extract) and slowly add into the dry cake mix bowl and combine thoroughly. If your mixture isn’t as sweet as you desire you can add in some more sugar BUT the white chocolate used to cover the pops and the end will add a lot of sweetness so keep this in mind!

I used 2 small ceramic mug cake bowls to bake my cake mixture. I split it evenly amongst the 2 and let them bake for 25 minutes at 250 Degrees Fahrenheit. Once they are baked through thoroughly remove from the oven and let them dry and cool completely.

While they cool, you can prepare your frosting!

Take your cream cheese and scoop it into a bowl and add in your ingredients (protein powder, sugar,  vanilla extract, & honey). Whip it all together until you have a thick frosting-like consistency. When your mini cakes have fully cooled, take both and place them in a large bowl and crumble the cake into a very fine almost grain-like consistency. Take 2 of your MPB White Chocolate Macadamia Cookies and crumble them until they look similar to the cake and add in the cookie crumbles to the cake mix. Take the other half Tbsp of white chocolate chips and chop them and add them to your cake mix. Mix it all together and now you’re ready to add your frosting!

Mix in the frosting thoroughly and make sure the consistency is thick enough to form 1 inch round balls (more or less) and that they do not crumble! This mix yields approximately 11 cake pops depending on how big you make them. Roll the cake batter mix into evenly round balls and place them either on a nonstick surface or a cake-pop tray to keep the round shape. Place in the freezer until firm.

Once you remove the cake pops. Take your white chocolate chips for dipping and melt them in a cup or ceramic jar that is deep enough to dip in your cake pop completely and allow for it to drip off excess chocolate. I melt them in increments of 1 minute in low power to avoid burning the chocolate. Place on nonstick parchment paper on a large enough plate and decorate with the MBP cookie crumble and top with white chocolate chips. Set aside and allow to harden!

*If you find the chocolate is too thick you can add a tsp or coconut oil to help loosen the consistency*
